Asian Sun-Dried Cherry & Vegetable Lettuce Wraps

Ingredients

12 each (2 pounds 8 ounces)

Gardenburger® Malibu Burger Organic Vegan

2 tablespoons (1 ounce)

canola oil

1/2 cup (1 ounce)

fresh ginger root

7 each (1 pound)

carrots, julienned

5 2/3 cups (2 pounds)

sun-dried or dark sweet cherries

1/4 cup (2 ounces)

rice vinegar

1/4 cup (2 ounces)

teriyaki sauce

2 tablespoons (1 ounce)

honey

24 each (2 pounds 4 ounces)

leaves of lettuce (Bibb, iceberg or romaine)

1 1/4 cups (8 ounces)

green onion, chopped

1 1/4 cups (4 ounces)

almonds, sliced

2 cups ( 4 ounces)

crispy chinese rice noodles

Asian Sun-Dried Cherry & Vegetable Lettuce Wraps

Directions

1. Cook Gardenburger® Malibu Burger patties according to package instructions; then dice.
2. Heat oil in large skillet over medium-high heat. Add ginger, carrots and cherries and sauté 3 minutes; then add rice vinegar, teriyaki and honey. Bring to simmer; then add Gardenburger® Malibu Burger pieces.
3. Spoon desired amount of veggie/cherry mixture onto center of each lettuce leaf; top with green onions, almonds and rice noodles and serve.
