Spinach and Black Bean Frittata

Ingredients

25 each (3 pounds 12 ounces)

Morningstar Farms® Spicy Black Bean Burger

vegetable oil cooking spray

1/2 cup (4 fl. ounces)

vegetable oil

1 quart 1 pint (2 pounds)

onion, chopped

3 quarts (10 ounces)

packed fresh spinach,

25 large

eggs

3 quarts (96 fl. ounces)

skim milk

1 quart 1 pint (2 pounds 8 ounces)

tomatoes, diced

1 quart 1 pint (1 pounds 8 ounces)

reduced fat Mozzarella cheese, shredded

1 1/2 cups (2 1/2 ounces)

dried thyme

Spinach and Black Bean Frittata

Directions

1. Preheat oven to 425°F. Coat 50 small baking dishes with cooking spray. Set aside.
2. Heat oil in a large pan over medium heat. Sauté onion until soft but not brown, 2 to 3 minutes. Add spinach and cook 2 to 3 minutes.
3. Remove from heat. Lightly whisk eggs and milk in a bowl. Stir in tomatoes, cheese, thyme, and Morningstar Farms® Spicy Black Bean Burgers - CN Label.
4. Spoon into baking dishes; bake until firm in the center, cut into quarters, and serve.
