Gardenburger® Pinwheels

Ingredients

25 each (4 pounds)

Gardenburger® Classic Hamburger - CN Label

50 - 8 inch each

whole wheat tortillas

1 1/2 cups (12 fl. ounces)

light mayonnaise

3 quarts (3 pounds 4 ounces)

dried sweetened cranberries

1 gallon 2 quarts (7 pounds)

carrots, fresh, julienned

1 gallon 2 quarts (1 pound 5 ounces)

fresh baby spinach

1 quart 1 pint (24 ounces)

Swiss cheese, shredded

Directions

1. Preheat oven to 375°F. Heat Gardenburger® Classic Hamburgers - CN Label slices in oven for 6 minutes, then slice thinly.
2. Lay the wraps on a work surface and spread 1/2 tablespoon mayonnaise on each wrap.
3. Place approximately 1/4 cup cranberries, 1/2 cup each of carrots and spinach, 2 tablespoons of cheese, and burger slices on each wrap, fold closed and serve.
