L’Eggo My Eggo® with Avocado and Feta Cheese

Ingredients

24 ea (1.85 lb)

Kellogg’s® Eggo® Nutri-Grain Whole Wheat Waffles

6 ea (46 oz)

Avocado

1 1/2 cups (12 oz)

Feta cheese, crumbled

24 ea (36 oz)

Eggs

3 tsp

Salt

1 tsp

Black pepper, ground

L’Eggo My Eggo® with Avocado and Feta Cheese

Directions

1. In a bowl, mash together avocado and crumbled feta. Set aside.
2. Lightly coat nonstick skillet with cooking spray. Heat over medium-high heat. Break egg and slip into pan. Immediately reduce heat to low. Cook, uncovered, for 5 or 6 minutes or until egg white is completely set and yolk begins to thicken, but is not hard. Slide turner under egg and turn in over. Cook second side to desired doneness. Season with salt and pepper.
3. Prepare Kellogg’s® Eggo® Nutri-Grain Whole Wheat Waffle according to package directions.
4. Spread 2 1/2 oz avocado mixture on waffle. Top with egg. Serve immediately.
